However, in order to start with the green olives of our grove and produce this delicacy, a whole team is required. Valfrido, our man in the grove, is Stefan’s neighbor and, since his father had an olive grove as well, has dealt with the field of olive growing throughout his entire life. He nourishes the groves with dedication, know the characteristic features and the needs of the different species and cares for each olive tree with all his passion.
Our little Maurizio – as we affectionately call him – is our number cruncher. He has been working in our mill for 44 years and is in charge of all administrative aspects. How much do the olives weigh? Maurizio knows the answer! Which delivery will have to be pressed next? Maurizio can tell you. How many liters of oil were produced? He holds it all together and in a magnificent way!
For every „little“ Maurizio, there is always a big one! As an oil miller, he knows every single machine and their functioning like no other. He is responsible for the pressing and keeps things ticking over. As a part of the modernization of our mill, Maurizio was in charge of the planning and construction of the new facility. For everything that concerns the mill, he can rely on the help of his apprentice Stefano. This is also part of our philosophy: preserve and pass on the precious knowledge of the origin of our cold pressed native olive oil.
When he talks about his job, you can tell right away that he has discovered his true vocation. For example, if you ask him about his work experience, this 40-years-old man will tell you that he has 40 years of experience. He will then tell you that, growing up, he has always been a part of the world of olive growing thanks to the family tradition.
... Although, at first, he took an entirely different direction. He used to work as a programmer in an international company for a long time. Today, he usually says that this meticulous and analytical job still helps him while working for the mill. Luca is one of the world’s best olive oil sommeliers. At BUTTINALE 73, he is in charge of the quality during the whole process – from pressing to bottling. He creates the unmistakable taste of our oil, with thoroughness, passion and in close collaboration with the whole team.
